- Corvina Veronese (from 45% to 95%) however, in this context the presence of Corvinone is permitted to a maximum extent of 50%, replacing an equal percentage of Corvina; Rondinella (from 5% to 30%). Grapes from non-aromatic red grape varieties allowed for cultivation in the province of Verona in a maximum of 15% can contribute to the production of these wines, up to a maximum of 25%, with a maximum limit of 10% for each single grape variety used.

- It arises from calcareous soil, from scree deposits and landslide-derived soils, with a predominance of fine earth on the skeleton.

- Cold bottling by sterile microfiltration.
Production technique
It involves maceration of Valpolicella wine with fermented pomace from dried grapes previously used for the production of Recioto or Amarone. When the new wine is drawn off, after having statically drained the pomace in a more or less intense manner in the fermentation vat, Valpolicella wine obtained from fresh grapes is placed in the same container in contact with the pomace still in partial fermentation, followed by alcoholic fermentation at a controlled temperature and subsequent maturation in small barrels.
Sensory analysis
Intense red wine with garnet reflections. Elegant aroma, with hints of wild berries. Refined, harmonious and velvety flavour.
Food pairings
It goes well with medium-aged cheeses, cured meats, roasts in general, grilled meats and game-based pasta and risotto dishes. Serve at 18 °C, uncorking the bottle half an hour before consumption.
